I have told some of you about this recipe and finally got around to posting it. It is easy to make, delicious, MUCH less expensive than store bought granola, and has a lower fat and sugar content than most.
You can substitute milled flax seed for the wheat germ or just add it in if you want to make it wheat free or just get some Omega 3's in the mix. I usually double the recipe which makes enough for a week of daily consumption.
Enjoy!
2 cups rolled oats (do not use quick or instant)
1/8 cup wheat germ (substitute or add 1/8 cup milled flax seed)
1/8 cup shredded coconut
1/4 cup roasted unsalted sunflower seeds
1/8 cup brown sugar
1/8 cup canola oil
1/4 cup honey
generous splash vanilla
dash of salt
In a bowl mix all ingredients thorougly with a fork. Spread evenly in a 9x12 metal sheet pan. Bake for 15 minutes @ 350. Remove from oven, stir, respread in pan and bake for 5 more minutes or until golden brown. Let cool completely before storing in a plastic-ware container.

Great recipe! I may try this out. I need an oatmeal alternative!
FYI-For those wondering, 1/8 cup is equal to 2 tablespoons.

I add in some buckwheat groats and occasionally some dried cherries or pumpkins seeds whatever I have around-
have never tried the vanilla, will do that next time, thanks Ben!
