Hi everyone! I have been looking for healthy, fresh, nourishing recipes and thought we could start posting some of our favorites here. During teacher training Nicole made us a delicious kale salad. I always feel revitalized when I eat it and felt like sharing the recipe. Here's the recipe: 1 whole kale - rip the leave of and throw away the thick stems. Cut the kale into 2 inch by 2 inch squares spinach leaves - i just eyeball it. one big handfull will do cilantro - chop up the whole thing and throw out the stems. one can aduki beans, drained- i can only find these at sprouts, so when i go to tom thumb i substitute garbanzo beans raw ginger- peeled and then diced into tiny pieces 1/3-1/2 bag of baby carrots - diced into tiny pieces mix it all up in a big bowl and add 1/2 cup lemon juice and a touch of raw olive oil. Here's another salad i'm currently addicted to. You'll need to mess with the amounts since I usually just eyeball it. Tomato basil salad small tomatoes sliced into 6 wedges. - I usually buy a plastic container at tom thumb called campellis i think. There's like 10-12 tiny tomatoes in there but 5-6 roma would also work. just make sure they have a good flavor. one big handful of spinach greens 2 cucumbers- slice them one inch thick then quarter them kalamata olives - pitted and chopped (i reccomend getting them from the olive bar by the deli at the store, not jarred) 1/2 cup feta cheese (optional) 1 avocado cut into cubes and now the magic ingredient. BASIL. Gotta have it. Chop up a whole bunch of fresh basil. Add dark balsamic vinegar to taste and toss. Enjoy and tell me how you liked it! |
